Type of Dish: Appetizer

Ingredients: Chicken bones
3-4 white onion
3 bay leaves
2 cans tomato puree
1 can tomato paste
1 cup basmati rice
1.5 cups chopped cilantro
Salt / pepper to taste about 2 tablespoons each
¼ teaspoon of Devil’s Envy Spice

Instructions for making the dish: In an 8 quart pot fill just over half with water, add bones and bay leaves and bring to boil. Add chopped onions and let it boil for about 40 minutes. Remove bones and let cool. Also remove bay leaves and discard. Add all canned ingredients, rice and salt / pepper. Bring to a boil and then simmer for another 30 minutes. While simmering, remove chicken from bones and return it to the pot (bones can be discarded). During the last 5 minutes add 1 cup of cilantro to the pot and stir. To serve, Plate soup add a pinch of cilantro as garnish and a ¼ teaspoon of Devil’s Envy for spicy heat
